As a vegan, from time to time, we all get a real craving for something non vegan. From this people come up with the best substitutions and creations. Sometimes making us question “why do people need animal products at all?” The Craveable Chickpea Salad Sandwich is one of those items.
Craving anything from chicken salad to a tuna fish sandwich? The versatile chickpea salad sandwich will not only curb that craving but surpass your want.
This simple recipe can be made in a matter of minutes and can feed up to three people.
Why a Craveable Chickpea Salad Sandwich
You may be asking yourself why chickpeas? Well, simple canned chickpeas are completely ready to go. The mash in to a smooth yet hearty substance. Plus, they easily take on flavors.
Just because it is an easy recipe doesn’t mean it can’t taste like an elevated dish, too.
With simply some:
- Chickpea
- Onion
- Garlic
- Jalapaneo (Optional)
- Paprika
- Salt
- Pepper
- Vegan Mayo
- Mustard
- Lettuce
- Bread (Prefer Toast)
- Hot sauce
You can have a fantastic, healthy and vegan lunch.
As a side note you can put it all in a food processor. You get a similar flavor and an even easier experience. However, we do like the chunky texture you get by mashing it yourself.
Also who wants to clean a food processor for lunch. Save that for the dinner rush.
How to make a Craveable Chickpea Salad Sandwich
Start by opening a can of chickpeas. Drain the liquid. This is called aquafaba, we suggest saving this for an egg replacer. (mostly in baking)
Next, pour the can of chickpeas into a bowl. Mash them up real good.
Add vegan mayo, mustard, chopped onion, jalapeno, garlic and spices.
Fold and mix it all together. Toast your bread during this step.
Spread the mixture on the bread. Add your lettuce and hot sauce.
Lastly, slice in half and enjoy! Yum!

Chickpea Salad Sandwich
Equipment
- 1 Food Processor optional see notes
Ingredients
- 15 oz Canned Chickpeas
- 3 tbsp Vegan mayo
- 1 tbsp Mustard
- 1/2 whole Red onion chopped
- 3 cloves garlic
- 5 slices jalapeno chopped optional
- 1 tsp paprika
- 1 tsp Salt and pepper to taste
- 2 slices bread prefer toast
- Shredded Lettuce
- Hot Sauce Optional
Instructions
- Open a can of chickpeas. We save liquid. It's called aquafaba and is a great egg substitute for baking mostly.
- Pour chickpeas into a bowl. Mash them up. Put your toast down before the next step.
- Add Vegan Mayo, Mustard, onion, garlic, jalapeno, paprika, salt and pepper. Mix it all together.
- Spread mixture on each slice of bread. Add Lettuce and hot sauce. (If so inclined)
- Slice and enjoy!
