Open a can of chickpeas. We save liquid. It's called aquafaba and is a great egg substitute for baking mostly.
Pour chickpeas into a bowl. Mash them up. Put your toast down before the next step.
Add Vegan Mayo, Mustard, onion, garlic, jalapeno, paprika, salt and pepper. Mix it all together.
Spread mixture on each slice of bread. Add Lettuce and hot sauce. (If so inclined)
Slice and enjoy!
Notes
The Food Processor works fast and easy. We prefer the chunky texture from mashing. Plus, who wants to clean a food processor for lunch, save that for dinner time.
