Chickpea Salad Sandwich

Chickpea Salad Sandwich is a simple lunch that fills so many cravings.

Equipment

  • 1 Food Processor optional see notes

Ingredients
  

  • 15 oz Canned Chickpeas
  • 3 tbsp Vegan mayo
  • 1 tbsp Mustard
  • 1/2 whole Red onion chopped
  • 3 cloves garlic
  • 5 slices jalapeno chopped optional
  • 1 tsp paprika
  • 1 tsp Salt and pepper to taste
  • 2 slices bread prefer toast
  • Shredded Lettuce
  • Hot Sauce Optional

Instructions
 

  • Open a can of chickpeas. We save liquid. It's called aquafaba and is a great egg substitute for baking mostly.
  • Pour chickpeas into a bowl. Mash them up. Put your toast down before the next step.
  • Add Vegan Mayo, Mustard, onion, garlic, jalapeno, paprika, salt and pepper. Mix it all together.
  • Spread mixture on each slice of bread. Add Lettuce and hot sauce. (If so inclined)
  • Slice and enjoy!

Notes

The Food Processor works fast and easy. We prefer the chunky texture from mashing. Plus, who wants to clean a food processor for lunch, save that for dinner time.
